Roller crushing; Grape peels are macerated to extract polyphenolic substances by means of controlled temperature fermentation (28°-30°C). Racking off and squeezing of marcs is carried out with the soft press method.
Storage and further refining :
After alcoholic fermentation wine is left to age in steel tanks. It later is moved in Slavonia oak casks. After stabilisation, both from the protein and tartaric points of view, the wine is bottled for further 3-6 months for refining.
ORGANOLEPTIC PROPERTIES :
This wine has a ruby red colour with bright purplish hues. The scent is that of ripe red fruits with a trace of vanilla. It has a balanced, soft and engulfing taste. Recommended for roast red meat and venison dishes. Recommended serving temperature is 18°-20° C.
