ORGANOLEPTIC PROPERTIES :
Colour: Ruby red with purplish hues.
Aroma: Red fruits, with traces of marasca cherry, spiced.
Taste: Tasty, soft, averagely robust, slightly tannic. Recommended serving temperature is 18°-20° C. Recommended for appetizers, tasty meat and fish first courses, white roast meat, fresh cheeses
Vinification: Roller crushing; Grape peels are macerated to extract polyphenolic substances by means of controlled temperature fermentation (28°-30°C). Racking off and squeezing of marcs is carried out with the soft press method.
Storage and further refining :
After alcoholic fermentation wine is left to age in steel tanks. for about 4 months. Bottling takes place in the spring following harvesting.
