Vinification: Roller crushing, squeezing with soft press. Cold refining of must and fermentation of clearer part under controlled temperature (16°-18° C.)
Storage and further refining : After alcoholic fermentation, wine is stored in steel tanks equipped with cooling pockets. After stabilisation, the wine is bottled at the beginning of the year following harvesting.
ORGANOLEPTIC PROPERTIES : Straw yellow with greenish reflections. Fine nose with fresh fruity aroma of green apple, white peach and traces of exotic fruits' flavours, slightly floreal. Delicate, tasty, good persistence and lightly sapid flavour. Recommended serving temperature is 8°-10° C. Good pairing with fish aperitifs, light first courses and white meats.
