Vinification: Roller crushing, squeezing with soft press. Cold refining of must and fermentation of clearer part under controlled temperature (16°-18° C.)
Storage and further refining : After alcoholic fermentation, wine is stored in steel tanks equipped with cooling pockets. After stabilisation, the wine is bottled at the beginning of the year following harvesting.
ORGANOLEPTIC PROPERTIES : Colour: Bright pink colour, with light purple reflections. Nose: cherry and strawberry notes. Taste: Pleasant freshness and bitter aftertaste reminding almonds, typical characteristic of the vine specie. Serving temperature is 10°-12° C. Recommended for appetizers, slightly seasoned cheeses, first fish courses and white roasted meats. Good pairing with pizza.
