Harvesting Manual

Vinification: Roller crushing of grape peels and following maceration to extract polyphenolic substances by means of controlled temperature fermentation (28°-30°C). After 10 days about, racking and squeezing of skins are carried out by the soft press method.

Storage and further refining : After alcoholic fermentation, the wine is left to age in steel tanks for about 4 months. Bottling takes place in the spring following harvesting.

ORGANOLEPTIC PROPERTIES : Colour: Ruby red with purplish hues. Nose: Red fruits, typically blackberries and sour cherries. Taste: Tasty, fresh, medium-bodied, with pleasant light tannins and good persistence. Recommended serving temperature is 18°-20° C. Recommended for first courses with tomato sauce, slightly seasoned cheeses and tasty meats.
